Instant Peach Jalebi Topped with Whipped Cream and Pistachio is an Indian Sweet dish with a fruity twist.Instant Peach Jalebi Topped with Whipped Cream and Pistachio30 minutes Serves 6Ingredients Ingredients For Jalebi: flour - 1 cup yoghurt - cup baking powder - 1 tsp orange food color - tsp (optional) rapeseed oil + extra virgin olive oil or clarified butter (ghee) to deep fry thick peach juice - cup or as needed Ingredients For Peach Syrup: sugar - 2 cup water - cup peach juice - cup saffron strands - 4-5 ground cardamom - 1 tsp pinch of orange food color (optional) piping bag Ingredients For Serving: dried rose petals whipped cream pistachios Instructions For Peach Syrup:1. Add water to a pan. Now add peach juice and sugar and bring it to a boil. 2. Reduce the heat on medium low and boil till you see one string consistency. 3. This would take about 15 minutes. Add saffron stands, and cardamom to it. 4. To check consistency, take a drop of slightly cooled syrup between index finger and thumb and press together. 5. Slightly raise the finger. If the syrup pulls up as well to get a thread, the syrup is ready. Remove from heat. Instructions For Batter:1. In a large mixing bowl add flour and baking powder. 2. Add the yoghurt, food color and mix well. Now add enough peach juice to make a thick smooth batter. 3. Batter should be pour like consistency. 4. Fill the batter in a piping bag and hole around 4mm diameter.Instructions For Jalebi:1. Heat ghee or oil in flat shallow bottomed pan. The oil should not be too hot. 2. Pipe the batter in circles and cross the circle to ensure that the spiral stays together. 3. Pipe around 3-4 jalebis at a time. 4. Deep fry the jalebis till golden brown and transfer into warm sugar syrup. 5. Remove the jalebis to a moderately warm syrup and allow the jalebis to soak the syrup for about 1 minute. Instructions For Serving:1. Drain immediately and serve hot like that, or let them cool slightly. 2. Topped with whipped cream, peaches, rose petals and pistachio.
