Pasta Dough and Cheese Ravioli Recipe

1. Pasta Dough Ingredients 2 eggs 1 - 2 cups flour 2 tsp Olive Oil tsp Salt Directions 1. Put flour on clean surface or in a bowl. Make a well in the flour. 2. Crack eggs into the well. Add oil and salt. 3. Mix the eggs and gradually mix in the flour from the sides of the well. 4. Knead dough when necessary. Incorporate as much flour as dough will allow. 5. Roll out dough using a rolling pin or pasta machine. 6. Cut dough into desired noodle form. Separate noodles and add flour as needed to keep from sticking together. 7. Cook in boiling water for approx. 5 minutes or until preferred tenderness. 8. Recommend serving with fresh grate parmesan. Recipe from: How To Video: Ravioli Filling Ingredients 1 cup ricotta cheese cup shredded provolone cup shredded mozzarella 4 oz. cream cheese 2 eggs 1 tsp parsley 1 Tbs water Directions 1. Combine cheeses, 1 egg, and parsley in a bowl. Mix well. Set in fridge to keep firm. 2. Roll out pasta dough to desired thickness. Using a circular object (a lid or cup), cut out circles from the dough and remove excess dough. 3. Mix 1 egg and water together to make an egg wash. Lightly cover of each circle with egg wash. 4. Put about a tablespoon in each ravioli, on top of the egg wash. Leave room on edges to seal the pasta. 5. Fold the ravioli in half and lightly press the edges together to seal and make a seam. 6. Boil for approx. 4 minutes until ravioli floats and pasta is cooked. 7. Serve with marinara and/or pesto. Recipe from: How To Video:
